Because Wanda Maximoff ( Elizabeth Olsen ) assassinates her in her hunt for America Chavez (Xochitl Gomez ).
So was that it with the Illuminati? Is this really the only time we’ve seen her in the MCU? Or is her death even becoming very important. Our Marvel expert Sebastian has some very interesting theories:

The Illuminati on Earth-838 are history for now, but of course there are versions of these characters on other worlds in the multiverse — including MCU Earth-616.
So of course many suspect that John Krasinksi as Reed Richards is a test for the planned » Fantastic Four » film. We could see him there again very soon. And some other characters appear again anyway. For example, Captain Carter is an important part of the second season of What If…? «His and Mordo is still hanging around somewhere in the main universe and is plotting against Doctor Strange there.
Of course, if we’re not talking about the individual characters, but about the group itself, then there’s an obvious way to bring the name back. Doctor Strange’s recent outing may have given him the idea that his world also needs such an Avengers-like, but more skill-guiding team. So in the future he could found the 616 version of the Illuminati – especially with a view to the danger of further incursions mentioned in the end credits scene of Clea ( Charlize Theron ).

But even more interesting is another theory from Sebastian, which he explains in his video: The death of an Illuminati may have a direct impact on the future MCU story: Because before Reed Richards dies, we learn that he has a wife and children. This may just be an Easter egg designed to inform comic book fans about the existence of Sue Storm and Franklin and Valeria Richards, but Marvel could do a lot more with it.
Because Franklin Richards is one of the most powerful Marvel characters — and even has the ability to travel through the multiverse. The death of his father could make the boy want revenge. Maybe not very timely, but sometime in the future, Marvel could present Franklin as a surprising threat to our world. Because on the search for his father’s murderer, about whose fate he doesn’t know anything at first, he could attack Earth-616.

Is Marvel already thinking of something like this? Probably not. In an interview with us , Benedict Cumberbatch revealed that he is always amazed at the theories that emerge and often thinks that these are even better than the actual stories. But even if Marvel doesn’t have the idea yet, you can pick it up later.
